Hurry-Up Monastic Stew

The monks never had it so good.

Short on time? Here’s a quick, nutritious stew you can prepare in less than five minutes.

  1. Empty one pack of Trader Joe’s Ready-to-Eat Lentils in a large microwave-safe bowl.
  2. Use fork to break the lentils apart.
  3. Mix in one can of Amy’s Organic Vegetable Lentil Soup.
  4. Cover and microwave for 4 minutes.

Serve with Trader Joe’s Organic Brown Rice (available in TJ’s frozen foods section), and slices of toasted multigrain bread.

Bonus: The heated stew and toasted bread fills your kitchen with the wonderful aroma of “just out of the oven” bread, and of stew that’s been simmering for “hours.”

Bon appetit!

P.S. For days when you have the time to cook from scratch, here’s the recipe for Frances Moore Lappe’s “Lentils, Monastery Style.”
